As you can see from my previous posts that I have been obsessed with mangoes these days . So here is another recipe which I made using juicy pulpy mango “Mango Sewaiyan”. Well actually this was my “Eid Special Video” Which I shared on my Food Channel on You Tube “Little Spice”
Sewaiyan is a very Popular Dessert in India and is made with usually Milk, Dry fruits, Sewaiyan and Sugar. As It’s the mango season I thought It would be great if I add a nice twist to this milk sewaiyan by adding juicy mango pulp . It really turned out great and my family loved it.
Hope you guys will too enjoy this recipe. Now let’s get straight to the recipe
This will serve 4-6 people easily
1. Milk- 1/2 litre
2. Sewaiyan – 50 gram
3. Almond – 20 (Badam)
4. Cashew- 20 (Kaju)
5. Raisins- 2 Tbsp (Kishmish)
6. Chironji- 2 Tbsp
7.Sugar – 3/4 cup (4-5 Tbsp)
8. Amul fresh cream – 1/4 Cup(optional)
9. Cardamom – 3-4 (ilaichi)
10.Desi Ghee – 2 Tbsp
Take a Pan and heat 2 -3 Tbsp of Desi Ghee(Pure Ghee) . Now we will roast all the dry fruits we have. You can take any dry fruits of your liking. I have here taken Cashews, Almonds, raisins and some Chironji. Roast them for about 2-3 minutes until they turn light golden and start leaving a nice aroma around the kitchen. Keep these Dry fruits aside
Now Let’s move on to another step which is roasting Sewaiyan. I used here thin sewaiyan , you can also use vermicelli in this recipe. Heat about 2 Tbsp of ghee and roast the sewaiyan for 2-3 minutes on medium flame. Keep tossing the sewaiyan because we don’t want to over roast them.
Once the sewaiyan are roasted , Add Milk, cardamom Powder and Sugar and cook for about 5-6 minutes till milk start getting thick. Once milk thickens, Add Cream and roasted dry fruits and give it a boil. Cream will give it more thick and creamy texture. If you don’t want to add cream You can totally skip it. Now after one boil Our Sewaiyan is ready. Switch off the flame and let it cool at room temperature for about 20 minutes. Now Finally add mango pulp to this and Stir well. Our Yummy “Mango Sewaiyan” is Ready.
You can keep this in fridge and serve cool if you like !! Garnish with some Grated Almonds on top right before serving .
