Hello Everyone !! Hope You all are doing great. Here is My Rakhi Special Recipe Today

Make this Rakhi even more sweet and more special with these amazing home made “Beasn ke ladoo” stirred with love and warmth .
Beasn ke ladoo are always special to me as they are my brother’s favorite and also in childhood me my brother and my cousin brothers used to finish the entire box of ladoo within hours. Lots of memories are associated with this special sweet and no better day to make this. I wish I could actually parcel this to all my brothers. This Rakhi give your brothers an amazing homemade treat they deserve and also don’t forget to take loads and loads of gifts in return of all the hard work .

INGREDIENTS-

1. Besan (Gram flour) – 2 Cups
2. Ghee- 1 Cup
3. Powdered Sugar – 1 Cup
4. Cardamom Powder(ilaichi) – 1Tsp
5. Cashews – 5-6
6. Almonds – 5-6
7. Powdered Almonds – 1 Tbsp(Grind 5-6 almonds in a mixer/grinder)

PROCEDURE-

Heat Ghee on medium flame , then add Gram Flour (besan) 2 cups and roast this on medium flame for 6-7 minutes. While roasting, keep stirring it or it will burn too easily. Once we start getting nice aroma and Flour starts to turn liquidy and get well combined with Ghee/oil , It’s the time when we know that flour is perfectly roasted. Now cool completely this .

After cooling the mixture we will add Powdered sugar, some cashews, almonds , cardamom and some crushed almond powder. Now mix everything together and make a nice mixture. Now take a small portion and make round shape ladoos. Top these yummy ladoos with some sliced almonds.

Hot Vegetable Soup

Today I am going to be sharing with you all a very yummy Monsoon Special “Vegetable Soup Recipe” I love Soups and they are healthy and very tasty. This recipe was requested by my wonderful subscriber So I made this for her !! And I simply love this soup made from fresh vegetables and used a little seasoning to keep the taste of vegetables intact and dominating .
Chopping of the vegetables plays an important role in any recipe. Here I have used finely chopped vegetables and this adds a lot to taste 🙂

INGREDIENTS –

1. Tomato Puree- 1 Cup
2. Chopped Cabbage -1 Cup
3. Chopped Carrot -1
4. Chopped Capsicum – 1
5. Chopped Ginger- 1 Tbsp
6. Chopped Garlic- 1 Tbsp
7. Salt
8. Black Pepper – 1/2 Tsp
9. Black Pepper corns- 4-5
10. Vinegar-1 Tsp (optional As I have used tomato puree so if you don’t want you can skip it)
11. Fresh coriander leaves

PROCEDURE –

Heat oil- 1 Tbsp in a pan. Add finely chopped ginger garlic and saute for a minute on high flame till we start getting the nice garlicy aroma. Now add Chopped capsicum, finely chopped carrot, finely chopped cabbage and stir fry all the vegetables. Now we will add some salt and Black pepper. Toss the vegetables on high flame. Add 1 cup freshly prepared Tomato puree and give it a boil. Fresh tomatoes will add that tangy flavor and also puree will give some thickness to soup. Now add about 1 cup of water and when it comes to a boil, simmer for 5 minutes on low flame. After 5 minutes all the vegetables are perfectly cooked not less not more just the right amount that we want.

Now if the soup is not thick enough then we can add some cornflour slurry to it. Take corn flour 1 tbsp and add 4  tbsp of water to it . This is the slurry used to thicken  the soup. But I suggest only to to add this when the soup is too watery because soup tastes best when it is completely natural without any extra starch added.

Garnish with some fresh coriander leaves . Serve Hot with some fried bread toast.

Grab a Book and a wrap yourself inside a cozy blanket and have this soup hot when it’s raining outside. Well this is a perfect evening for me.

I hope you all are are fine and doing amazing. Today I bring to you my favorite “Spicy Pizza Bites” . Pizza Bites are actually made with a yummy Cheese Pizza , All we have to do is assemble a pizza of our favorite topping here I made a spicy saucy vegetable topping. And then cut that pizza into square bites and simply bake them. Each bite is so fulfilling and mouthwatering.
This is a perfect dish for the rainy evenings. A glass of chilled cold drink and a nice Book would make the evening awesome 🙂

So Now let’s get straight to the recipe –

INGREDIENTS :

1. Pizza Base-1
2. Chopped Onion-1
3. Chopped Capsicum-1
4. Tomato garlic Paste – 2 Tbsp
(Blanch 1 tomato with 5-6 garlic cloves and 1 dried red chili and some salt and make a paste)
5. Tomato Ketchup- 1 Tbsp
6. Mozzarella Cheese- 3-4 Tbsp
7. Oregano- 1 Tsp
8. Chili Flakes-1 tsp
9. Oil-1 tbsp
10. salt

PROCEDURE-

Heat oil- 1 tbsp in a pan. Add Chopped onion and chopped capsicum. Saute for a minute on high flame. Now add Tomato Garlic Paste and Tomato ketchup and mix everything well. Now we will add some slat and chili flakes and saute the vegetables on high flame for 1 minute. The Spicy Pizza Topping is Ready.

Take a Pizza base and apply some butter on top. Now Spread the Pizza Topping we made evenly . Grate some mozzarella cheese on top and sprinkle some oregano. Now cut the Pizza in small Square bites.

BAKE : We will now bake the Pizza Bites in Microwave on Convection mode at 200 degree C temperature for about 8-10 minutes. We want the crust crunchy and Vegetables cooked and cheese melted.

Serve the Spicy Pizza Bites hot and make your evening awesome!!

Hello Food lovers !!
I hope your day is going great . Today I am going to share with you all a very popular and traditional dish of South India “South Indian Sambar” .South Indian food without sambar is not complete. Here I show you how to make tasty sambar quick and easy. Sambar is made with Tur daal along with many vegetables. Tamarind pulp and tomatoes add that tangy flavor and a blend of authentic sambar Masala makes the recipe complete.

Let’s get straight to the recipe–

INGREDIENTS –

1. Tur Daal/Pulse- 1 Cup
2.Chopped Tomatoes-2
3. Chopped Onion-2
4. Cauliflower- 1/2 cup
5. Bottle gourd-1 cup (loki)
6. Carrot-1
7. Green chilies – 2-3
8. Curry leaves-8-10
9. Tamarind Pulp-1/2 cup
10. Salt
11.Turmeric- 2Tsp
12. Red chili Powder- 1 Tsp
13. Sambhar Powder- 2 Tbsp(I used Catch Smabar Masala)
14.. Oil-2tbsp
15. Mustard Seeds- 1 Tbsp
16. Asafoetida (Hing)- 1/2 Tsp
17. Dried red Chili-2

PREPARATION-

STEP 1 : Firstly we will cook Tur Daal/Pulse in Pressure Cooker. Wash Tur daal, Add 1 Glass of water to cook 1 Cup Daal. Add salt and turmeric and give 3 whistles. It will take 8-10 minutes to cook tur Daal completely. Now Once the daal is cooked blend it with a hand blender or you can even use a spoon and stir the cooked daal in quick circular motion to blend it smooth.

STEP 2: Take a Cooking vessel, Heat oil . Add greenCurry leaves, green Chilies, Chopped Onion and saute for  a minute. Now add chopped cauliflower, chopped Bottle gourd,chopped carrot and tomatoes. saute all the vegetables on high flame for about a minute. Now add salt, red chili powder, and turmeric. Mix all the spices together. now add tamarind Pulp and water and simmer the vegetables for10-12 minutes.

Once the vegetable are perfectly cooked add Cooked Tur daal and combine everything. Now add Sambar Powder to give it a final touch. Yummy Sambar is Ready.

Tadka / Tempting – Heat oil in a pan, Add mustard seeds, asafoetida(Hing), Curry leaves and dried red chilies. This tempting is aromatic.

Add this tadka on top of Sambar and the dish is complete. Serve hot with idli or rice !!

Hope Your day is going great. Today Here is the amazing simple recipe of veg mayo recipe. This one is made with fresh vegetables, Mayonnaise and a little bit of seasoning with oregano and chili flakes. I kept it simple and basic because that’s how it tastes more fresh and more tasty . Also added a touch of grated cheese on top to give this more cheesy look. You can have this in breakfast or in the evening when you get hungry It can be prepared in no time.

Let’s get straight to the Recipe

INGREDIENTS :

1. Boiled Potato – 1
2. Grated carrot-1/2
3. capsicum – 1/2
4. Onion- 1 (small)
5. Green chili -1
6. Veg Mayonnaise- 2-3 tbsp
7. Oregano – 1Tsp
8. Chili Flakes – 1 Tsp
9. Salt
10. Amul Processed Cheese Cube -1
11. Bread Slices – 4-6

STUFFING –

Take a mixing bowl, Add 1 grated boiled potato , 1 finely chopped onion, 1/2 finely grated carrot, 1-2 green chilies, 1/2 finley chopped capsicum. Now add 2-3 Tbsp of veg Mayonnaise and Mix everything nicely. Now we will add some seasoning to it. Add some salt, chili flakes and oregano. Give a quick mix. And our veg Mayo stuffing is ready.

SANDWICH :

Take Bread slices and remove the edges to make it a sandwich  bread slice. If you want to keep the edges you can totally keep the bread that way. now spread a thick layer of vegetable mayo mixture and cover it with another bread slice.  Veg mayo sandwich is ready. Cut in half and Grate some processed cheese on top to give it a more cheesey Look 🙂

Monsoon is here and We all love Chilled Thandai . Today I am going to share a very quick and easy Recipe of Badam thandai which is so yummy and any one can make it without much efforts.
Almonds and cashew adds the richness to the Milk and fennel (Saunf) gives the thandai the ultimate coolness and refreshing touch.

Let’s get straight to the Recipe –

INGREDIENTS :

1.Milk – 1/2 litre
2. Grated Almond- 2 Tbsp
3. Grated Cashew- 2 Tbsp
4. Fennel Powder (Saunf) – 1 Tbsp
5. Sugar- 2-3 Tbsp

PROCEDURE :

Boil 1/2 litre of the milk in a vessel. Add Sugar and stir. Now add Grated Amonds, Grated Cashews and Cardamom. Sir and mix everything. cook on medium flame and keep stirring. Now add Fennel Powder also known as Saunf, this will add that soothing refreshing coolness to the Thandai. Fennel Powder is the Key ingredient in this Recipe. Once we have added all the ingredients to the milk, Let it boil and then cook on low flame for 3-4 minutes. Now our flavored Milk is Ready . We will  refrigerate this for at least 2 hours.

Once the Thandai Milk is cooled completely. Serve this Chilled and Granish with grated Almonds !!

I hope your week is going great. To add extra goodness to your week I bring to you today, The Yummiest and Simplest Recipe of “Crispy Bread Cheese Cutlets” These cutlets are simply mouthwatering. And can be prepared very quickly.
Serve this with ketchup and Roasted Bread !!

Let’s Get Straight to the Recipe-

INGREDIENTS-

(This will make 10-12 medium size cutlets)
1. Boiled Potatoes – 3
2. Bread crumbs – 1 Cup (3 Bread slices grind in Mixer/blender)
3. Amul Cheese Cube-1
4. Onion-1
5. Chili flakes – 1 Tsp
6. Chat Masala – 1-2 tsp
7. salt
8. Fresh coriander leaves
9. Oil to fry

PROCEDURE-

Take a mixing Bowl , Add Boiled Potatoes and Bread crumbs. I took 3 Boiled Potatoes and Bread Crumbs of 3 Breads. Bread crumbs can be easily made by simply grinding the bread in a mixer/grinder. Bread Crumbs has a nice binding tendency and also It adds crisp to the cutlets when Fried. Now add some finely chopped onion and grated processed cheese. Now We will add some seasonings. Add some salt, Chili Flakes, Chat Masala and some fresh green coriander leaves. Mix everything together.

So now when the mixture is prepared we will make balls and flatten them to give them a round cutlet shape.

Heat Oil in a frying Pan and Drop cutlets one by one. Fry the cutlets on medium flame till both sides get crispy and golden. Each will take 2-3 minutes to turn crispy on medium flame.

Serve this Amazing crispy Bread Cheese Cutlets with Green chutney Or Tomato Ketchup.

I hope you all are doing great and enjoying the rainy season. To add extra Yumminess to this Monsoon I am going to share a yummy chocolatey “Choco Banana Smoothie” It’s very simple and very easy to make. All we have to do is Blend bananas , sugar , some ice-cream and chocolate sauce . And Yay our Yummy smoothie is Ready. . Add some grated chocolate on top to make it look even more tempting.

INGREDIENTS :

1. Banana-2
2. Milk- 200 ml
3. Sugar- 2 Tsp
4. Chocolate Syrup- 2-3 Tbsp
5. Vanilla Ice Cream – 1 cup
6. Some Chocolate for topping(I used dairy milk and milky bar)
NOTE :This will make 2 full glasses smoothie

PROCEDURE :

Take a Blender, Take bananas, add Chilled milk, Chocolate sauce and Sugar to it. Also to give it a more creamy texture Add 1 cup of vanilla Ice Cream. Now Blend this Smooth. Chilled Chocolate banana Smoothie is ready.  Top this with some grated chocolate and Chocolate sauce on top.

Hello Food Lovers !!

I hope you all doing great. Today I am going to share with you all very popular South Indian Recipe “Rava Uttapam” or some people say “Vegetable Uttapam” I love South Indian Food and Flavors , especially their authentic blend of spices . Rava uttapam is made by firstly making a batter of Semolina, Curd and some seasonings , then topping this better with fresh mixed vegetables. This recipe is great for  breakfast .

INGREDIENTS-

1. Semolina (Rava/Sooji)- 150 – 200 Gm
2. Curd- 150 Gm
3. Onion-1
4. carrot-1
5. Capsicum-1
6. Green Chili-1
7.Fresh Coriander Leaves
8. Tomato-1
9. Salt
10. Chili Flakes- 2 Tsp
11. Mint Powder- 2 Tsp
13. Baking Soda – 1 Tsp
14. Oil

PROCEDURE-

BATTER :Firstly we make a batter of Semolina(Rava) by adding Curd and water to it. Add the curd and semolina in the proportions I mentioned above, Now add water to this to make the batter of flowing consistency . Now add salt, baking powder, chili flakes and mint powder and mix everything together. Now rest this batter for 15-20 minutes

TOPPING: Now in a mixing bowl, take some chopped onions, Capsicum, chopped carrot, chopped tomatoes, green chilies, and chopped fresh coriander leaves. To this Mixed vegetables we will add some seasonings. Add some Salt, mint powder for the fresh minty flavor and some chili flakes. Our topping is Ready.

Now after giving a rest of 20 minutes to the batter,Take a pan and heat some oil, Spread the batter using a cup in round shape. now top this seasoned mixed vegetables. Cover it for 3-4 minutes on medium flame . After cooking one side flip the uttapam and cook other side similarly. Yummy veg Uttapam is Ready.

Serve Hot with Tomato chutney or Coconut Chutney !!

Mango Sewaiyan

Hello Food lovers !!

As you can see from my previous posts that I have been obsessed with mangoes these days . So here is another recipe which I made using juicy pulpy mango “Mango Sewaiyan”. Well actually this was my “Eid Special Video” Which I shared on my Food Channel on You Tube “Little Spice”

Sewaiyan is a very Popular Dessert in India and is made with usually  Milk, Dry fruits, Sewaiyan and Sugar. As It’s the mango season I thought It would be great if I add a nice twist to this milk sewaiyan by adding juicy mango pulp . It really turned out great and my family loved it.

Hope you guys will too enjoy this recipe. Now let’s get straight to the recipe

INGREDIENTS-

This will serve 4-6 people easily
1. Milk- 1/2 litre
2. Sewaiyan – 50 gram
3. Almond – 20 (Badam)
4. Cashew- 20 (Kaju)
5. Raisins- 2 Tbsp (Kishmish)
6. Chironji- 2 Tbsp
7.Sugar – 3/4 cup (4-5 Tbsp)
8. Amul fresh cream – 1/4 Cup(optional)
9. Cardamom – 3-4 (ilaichi)
10.Desi Ghee – 2 Tbsp

PROCEDURE-

Take a Pan and heat 2 -3 Tbsp of Desi Ghee(Pure Ghee) . Now we will roast all the dry fruits we have. You can take any dry fruits of your liking. I have here taken Cashews, Almonds, raisins and some Chironji. Roast them for about 2-3 minutes until they turn light golden and start leaving a nice aroma around the kitchen. Keep these Dry fruits aside

Now Let’s move on to another step which is roasting Sewaiyan. I used here thin sewaiyan , you can also use vermicelli in this recipe. Heat about 2 Tbsp of ghee and roast the sewaiyan for 2-3 minutes on medium flame. Keep tossing the sewaiyan because we don’t want to over roast them.

Once the sewaiyan are roasted , Add Milk, cardamom Powder and Sugar and cook for about 5-6 minutes till milk start getting thick. Once milk thickens, Add Cream and roasted dry fruits and give it a boil. Cream will give it more thick and creamy texture. If you don’t want to add cream You can totally skip it. Now after one boil Our Sewaiyan is ready. Switch off the flame and let it cool at room temperature for about 20 minutes. Now Finally add mango pulp to this and Stir well. Our Yummy “Mango Sewaiyan” is Ready.

You can keep this in fridge and serve cool if you like !! Garnish with some Grated Almonds on top right before serving .
